MD_DA840 Cheese - Western U.S. Report 32 - Released on August 10, 2022 Despite high temperatures in the West contributing to reduced milk output, cheese makers in the region report supplies are available for them to run busy production schedules. Some cheese makers say they continue to have to balance their schedules with labor shortages and delayed deliveries of production supplies. Inventories of both cheese barrels and blocks are available for spot purchasing. Retail demand for cheese is softening as some customers are reducing their cheese use, due to higher prices. Food service demand is also declining; stakeholders say restaurants in the area have reduced operating hours due to higher costs and labor shortages. International demand for cheese is unchanged. Market prices for cheese have been mixed on the CME since last Wednesday. Barrel prices have climbed and block prices have fallen, inverting the block-barrel relationship. In the West, wholesale prices are down $.1050 for process, and down $0.0975 for cheddar block, cuts and Monterey Jack. Swiss cut wholesale prices are up $0.0900 from the previous week.
