In general, bulk butter inventories are steadily building into cold storage for later use, especially during the summer season when butter fat is usually scarce. Butter demands from retailers, wholesalers, and food service vary in every region from fair to good. This week, bulk butter pricing varies by regions: East, 2.0 cents to 7.0 cents over the market; Central, 1.0 cent below to 6.0 cents above the market; West, 0.0 to 7.5 cents over the market, with various periods and averages used.
