Cream supplies are seasonally reduced, pushing some processors to rely on micro-fixing as the primary output method for print butter. In general, butter demand remains strong on the retail side. Food service requests have recovered in recent weeks, but are still below previous years' figures by a considerable margin. Across the country, this week, bulk prices are ranging from flat market to 8.0 cents above the market. Today, the CME Group’s Grade AA butter spot price is $1.7375, down $0.0275 from last Friday.
