Most of the butter produced is being frozen in bulk or is produced for contractual retail demands. Some market contacts report increased retail demand versus this time last year. Food service demand is steady. As in recent weeks, spot loads of butter are harder to acquire in certain areas of the East due to processors' preferences to freeze in bulk.
