Mushroom Production and Value Hit Record High Total volume of mushroom sales in the U.S. during the 1994-95 production year increased 4 percent over last year to a record high of 789 million pounds. The value of the mushroom crop increased 6 percent to $759 million. Growers received an average of 96.2 cents per pound, up 1.80 cents per pound from last season. The number of growers increased from 358 last year to 371 this year due to a rise in the number producing specialty mushrooms. Agaricus mushroom production totaled 781 million pounds, up 4 percent from the previous season. Pennsylvania led all States in production with 355 million pounds, down fractionally from last growing season. Pennsylvania growers supplied 45 percent of all Agaricus mushrooms grown in the U.S. California ranked second in production with 135 million pounds. This production represented 17 percent of all Agaricus mushrooms grown in the U.S. The value of the 1994-95 Agaricus crop totaled $731 million, up 6 percent from last season. Growers received an average 93.6 cents per pound, up 2.00 cents per pound from a year earlier. Prices increased for both fresh and processing mushrooms. Prices averaged $1.05 per pound for fresh mushrooms and 68.4 cents per pound for processing mushrooms. Fresh market sales accounted for 68 percent of the Agaricus crop while 32 percent went to processors. When mushroom statistics began in 1967, fresh market sales accounted for 25 percent of the sales while processing made up 75 percent of the sales. Specialty Mushrooms Volume of sales for commercially grown specialty mushrooms (Shiitake, Oyster, and all other specialties) in 1994-95 decreased to 7.99 million pounds, down 5 percent from the 1993-94 production. The average price received by growers increased 13.0 cents per pound to $3.54 per pound. Value of sales declined 2 percent from last year to $28.3 million. A specialty grower is defined as one having at least 200 natural wood logs in production or commercial indoor growing area. Shiitake mushroom sales totaled 5.25 million pounds, down 6 percent from last year's sales. The average price that growers received was up 13.0 cents per pound. The value of the crop deceased 3 percent to $20.1 million. Oyster mushroom sales are estimated at 1.71 million pounds, down 12 percent from last year. Prices were up 5 percent or 13.0 cents per pound. The value of sales was $4.51 million or 7 percent lower than the 1993-94 crop. All other specialty mushroom sales totaled 1.04 million pounds, 14 percent larger than the previous season. The total value of the crop increased 12 percent to $3.67 million. Prices declined 2 percent from $3.60 per pound last season to $3.54 per pound. The next "Mushrooms" report will be released in August 1996.
