Mushroom Production and Value Second Highest on Record Total volume of mushroom sales in the U.S. during the 1995-96 production year totaled 787 million pounds, down fractionally from last year's record high of 789 million pounds. The value of the mushroom crop decreased slightly to $758 million. Growers received an average of 96.3 cents per pound, unchanged from last season. Prices for mushrooms are what producers receive at the point of first sale. Refer to footnote 1 on page 3 for a further explanation of price. The number of growers continued to fall as the count for the 1995-96 season decreased to 357 growers, down from 371 growers last season. Agaricus mushroom production totaled 778 million pounds, down fractionally from the previous season. Pennsylvania led all States in production with 353 million pounds, down slightly from last growing season. Pennsylvania growers supplied 45 percent of all Agaricus mushrooms grown in the U.S. California ranked second in production with 131 million pounds, down 3 percent from last season. Of the 778 million pounds of Agaricus production, an estimated 25.0 million pounds, or 3 percent, were Brown mushrooms. Brown mushroom production includes Portobello and Crimini mushrooms. The value of the Brown mushroom crop for the 1995-96 season was an estimated $38.8 million. (continued from page 1) The number of Agaricus growers in the U.S. totaled 180, down 6 from last season. Of the 180 Agaricus mushroom growers, 11 realized sales of over 20 million pounds in the 1995-96 season. Growers with sales exceeding 20 million pounds accounted for 39 percent of U.S. agaricus production, or 304 million pounds. The other sales groups are as follows: between 10.0 million and 19.9 million pounds, 13 growers; 5.0 million to 9.9 million pounds, 14 growers; 2.5 million to 4.9 million pounds, 38 growers; 1.0 million to 2.4 million pounds, 36 growers; and those with less than 1.0 million pounds of sales, 68 growers. The value of the 1995-96 Agaricus crop totaled $728 million, down slightly from last season. Growers received an average 93.5 cents per pound, virtually unchanged from a year earlier. Increased prices for fresh mushrooms were offset by decreased prices for processing mushrooms. Prices averaged $1.09 per pound for fresh mushrooms, 4.00 cents above last season. Growers received an average 57.9 cents per pound for processing mushrooms, down 10.5 cents from previous season. Fresh market sales accounted for 69 percent of the Agaricus crop while 31 percent went to processors. When mushroom statistics began in 1967, fresh market sales accounted for 25 percent of the sales while processing made up 75 percent of the sales. Specialty Mushrooms Volume of sales for commercially grown specialty mushrooms (Shiitake, Oyster, and all other exotics) in 1995-96 increased to 8.84 million pounds, up 8 percent from the 1994-95 production. The average price received by growers decreased 15.0 cents per pound to $3.40 per pound. Value of sales was up 3 percent from last year to $30.0 million. A specialty grower is defined as having at least 200 natural wood logs in production or commercial indoor growing area. Shiitake mushroom sales totaled 5.67 million pounds, up 6 percent from last year's sales. The average price that growers received was down 36.0 cents per pound from previous season. The value of the crop deceased 4 percent to $19.8 million. Oyster mushroom sales are estimated at 1.79 million pounds, unchanged from last year. Prices were down 6 percent or 16.0 cents per pound. The value of sales was $4.47 million or 6 percent lower than the 1994-95 crop. All Other specialty mushroom sales totaled 1.38 million pounds, up 32 percent from last season and 53 percent above the 1993-94 crop year. The total value of the crop increased 55 percent to $5.79 million. Prices increased 17 percent from $3.56 per pound last season to $4.18 per pound.
